Fine Dining In Buenos Aires - Tradition, Innovation Buenos Aires’ fine-dining scene grows out of a long tradition shaped by immigration, access to a wide range of produce, and a culture centered on eating together. For much of the 20th century, the city’s most respected restaurants were steakhouses and European-style dining rooms rooted in Spanish and Italian cooking. In the early 2000s, a new generation of chefs began to reinterpret these traditions, drawing on contemporary techniques while keeping a strong focus on local products such as grass-fed beef, freshwater fish, Atlantic seafood, and seasonal produce. This shift marked the beginning of a more experimental fine-dining identity, one that remained tied to Argentine ingredients rather than imported luxury models. A major milestone came in 2023, when the Michelin Guide officially launched its first edition for Buenos Aires and Mendoza, placing the city on the global fine-dining map.
