we have everything we need. To start, we order the conch ceviche and tuna ceviche –because, can you ever have enough? — both of which are fresh and tasty. Our main course includes the lobster tail with grilled vegetables, which is plump, tender, and grilled to perfection, and the grilled chicken with plantains. Satiated appetites, a bottle of sparkling rosé deep, and a few laps in the sun-soaked pool later, and we are feeling nice and relaxed. To further induce a peaceful state, we visit their onsite spa, Exhale: Barre, Yoga, and Spa. With a menu of pampering treatments that include facials, massages, wraps, and scrubs, we choose the 50-minute Provo Deep Flow massage ($160). The deep tissue massage successfully relives the tension in my back and shoulders. For those looking to get a workout in while on vacation, next door is the 24-hour fitness center, Exhale Gym. The state-of-the-art gym is equipped with cardio machines, weights, and offers a list of classes, including Barre and Boot Camp. The sun begins to set and we retreat to our prized balcony for a glass of vino before our seven-course tasting at Stelle. On the restaurant's outdoor patio, diaphanous white curtains hang from the towering columns, while soft candle light illuminate the tables and create a magical feel. We begin with tastings of practically every one of their Starters: Tuna Tartare ($25) with salmon roe and avocado pudding; Baby Beetroot Salad ($23) with goat cheese and candied radish; Deconstructed Caprese Salad ($24) with Buffalo Mozzarella; and Chicken Wonton Soup ($16). Every dish is bursting with rich flavors that complement one another beautifully. For the main course, we enjoy full-sized portions of the Truffle Risotto with Wild Mushroom ($32) infused with herb foam and Beef Rendang ($37) with braised wagyu beef cheeks, coconut milk, and jasmine rice. Both dishes truly showcase the chef's award-winning abilities. Our sweet tooth is satisfied with their beautifully-presented Chocolate Mousse ($12) with black olive crumble, beetroot, and raspberry coulis and their Kiss Me One More Time ($20) dessert cocktail made with rum, vanilla ice cream, Frangelico liqueur, and chocolate flakes –the perfect night cap.
