Gwen Butcher Shop & Restaurant Gwen is Los Angeles' new gastronomic hotspot. A butcher-charcuterie shop and restaurant, it offers a unique, bold concept that gives food connoisseurs an unparalleled experience. Guests can order off their Feast menu, which for $95 per person, offers Duck Speck, Pork and Liver Terrine Wrapped in Pancetta, Cured Salmon… The menu includes charcuterie, salads, homemade pastas, and an impressive list of wines from all over the globe. During their childhood, owners and brothers Chef Curtis Stone and Luke Stone were exposed to their grandmother's livestock farming outside of Melbourne, Australia. Over the years, curiosity and appreciation developed with great respect for the process of raising animals for food. While working for Chef Marco Pierre White in London, Chef Curtis Stone fell in love with the quality and craft of European butcher shops. This led to a conscious understanding of whole animal utilization and consideration for primitive cooking methods and opening a restaurant, whose name was inspired by their maternal grandmother's, Gwen. Gwen Butcher Shop Gwen Butcher Shop, which is open during the day for retail, is a place of highly-skilled butchery practices combined with extensive knowledge to produce the finest cuts and handcrafted butcher items. The shop is also the entryway to the restaurant. What's exceptional about Gwen's is that it's a place where they have mastered the art of traditional butchering and use the best quality products. Gwen's team works with a handpicked selection of the highest quality farms to include heritage breeds and seasonal game sourced from around the world, carrying Scottish grouse, wild boar, venison, and more. It offers an outstanding charcuterie program, specializing in both fresh and dry cures crafted onsite such as house made sausages and handmade fresh cures, like terrines and pâtés, alongside dry cured items like pancetta and salami of extraordinary quality.
