DINING Chef Samuel Faggetti brings innovative dishes with a Caribbean flair to the Resort's top-rated culinary delights. MANGO This open-air, waterfront restaurant is not to be missed. Enjoy Caribbean and Latin-infused food with refreshing oceanfront views. Try the local ceviche of the day or the tuna ceviche with potato, avocado, and jalepeño. For mains, enjoy the jerk-rubbed pork tenderloin with plantain and bacon mash or the mahi mahi served with stewed curried lentils, green beans, and plantain. CORAL GRILL Savor fresh seafood and prime cuts of meat in an elegant setting. Notable appetizers include the shaved Strip Steak Crudo served with Horseradish Puree, Arugula, Kalamata Olives and Jalapeño, and the Charred Octopus with clams, chorizo and saffron butter.
