Spaghetti al Pomodoro—an incredibly memorable, velvety pasta made with three types of tomatoes that I still find myself craving. The sommelier paired these seafood flavors beautifully with a crisp, mineral-forward 2022 Etna Doc Bianco “Cavaliere” from Palmento Costanzo. For breakfast, I visited Il Caffè on the ground floor. The space is exceptionally designed with towering white marble columns, woven rattan chairs by Bonacina 1889, and warm terracotta banquettes. Rather than a standard, self-serve buffet, breakfast here is entirely à la carte, meaning you can ask for pretty much anything your heart desires. I requested my usual green juice, a perfectly cooked vegan omelette, fresh berries, and chia seed pudding—all served on pink-gold-rimmed white porcelain dinnerware featuring a vibrant floral motif. For panoramic skyline views, guests can head to the rooftop lounge, La Terrazza, which is surrounded by native Roman flora. On the ground floor, the Bulgari Dolci boutique offers artisanal Italian pastries and handmade chocolates. Amenities & Wellness Evoking the classic design of ancient Roman baths, the subterranean Bulgari Spa spans 1,500 square meters of sophisticated tranquility. I found it to be a wellness sanctuary, combining cutting-edge technology with holistic therapies. The space is home to eight treatment rooms alongside an exclusive, state-of-the-art Onyx Spa Suite, which features side-by-side treatment beds and a dramatic green alabaster hydrotherapy tub. The treatment menu is quite comprehensive. Although I did not have a treatment myself, I noted an array of advanced offerings, including high-performance Augustinus Bader skincare, Sapphire 3® Ionix Light LED therapies, and personalized Ground wellness rituals utilizing vegan, plant-based products. There is also an array of restorative options, from deep tissue and lymphatic drainage to Thai and Ayurvedic massages, alongside specialized cryotherapy, longevity rituals, and seasonally inspired Bvlgari Journeys. The Bulgari Spa’s main showpiece is definitely the 20-meter heated pool, which pays direct homage to the ancient Baths of Caracalla.
