Dining Dining at Palazzo Daniele reflects the same philosophy found throughout the property: simple, authentic, and connected to the land. The kitchen celebrates seasonal Salento cuisine using simple, fresh ingredients sourced from local farmers, including herbs and citrus grown in the property’s own garden. One of my favorite details was that guests are welcome to step into the kitchen. I spent time chatting with the cooks as they prepared lunch and learning about the regional ingredients and recipes. Seasonal menus, organic produce, and natural wines made with indigenous yeasts complete an experience centered around the authentic flavors of Puglia.
