De Cecco (dececco.com) has been making pasta in Abruzzo since 1886, although the family’s milling history dates back to 1831. The company is particularly known for its traditional bronze-die extrusion, which gives the pasta a slightly rough surface that helps sauces cling to it. De Cecco also uses slow, low-temperature drying, a method that preserves the pasta’s texture and flavor. From a nutritional standpoint, traditional durum-wheat pasta is primarily a source of carbohydrates, providing energy while also contributing protein. De Cecco’s whole-wheat varieties offer additional fiber and minerals, making them another option for people looking to increase whole grains in their diet.
