Food & Drink Under the direction of celebrity chef Jean-Georges Vongerichten, enjoy haute cuisine at the Matador Room, the hotel’s signature restaurant. Order the Heart of Palm Heirloom tomato salad with coconut and avocado as an appetiser or the wild Gulf Shrimp with sautéed garlic and chilli oil. For the main course, the roasted grouper with fingerling potatoes and Bok Choy is a delicious choice. The grilled Beef Tenderloin with Red Chilli Butter, spinach and toasted Sesame Seeds is also an excellent choice. There are also a variety of pizzas, pastas and vegetable sides. For dessert, indulge in the warm Valrhona Chocolate cake with vanilla ice cream. The Matador Bar, adjacent to the Matador Room, is the ideal place to enjoy a cocktail before or after dinner. The café-style dining room, called Market at EDITION, offers a culinary mix of gourmet cuisine, pastries, cold cuts, raw bar and wines. It is open daily for breakfast and lunch. On special occasions, the glamour of the 1950s is brought back to life at Lobby Bar with its signature cocktails.
